6 ounces rice pilaf mix1 tablespoon vegetable oil1/2 cup orange juice1 cup halved pitted dried plums1/2 cup sliced green onions1/2 cup sliced radishes1 tablespoon white wine vinegar1/2 to 1 teaspoon finely grated orange peelDash hot pepper sauce4 lettuce leaves for garnishOrange slices for garnish (optional)

Instructions: |
Prepare rice mix according to package directions, substituting 1 tablespoon vegetable oil for the butter and 1/2 cup orange juice for 1/2 cup of the water; remove from heat. Stir in dried plums; cool to room temperature. Mix in remaining ingredients except lettuce. To serve, line 4 plates with lettuce. Spoon equal amounts of rice mixture over each; garnish with orange slices, if desired. |
